This is one of my favorite “green” smoothies as I get the wonderful dense nutrients from the spinach and cucumber, but the banana adds a creamy non-dairy texture and additional sweetness that make the entire smoothie taste almost dessert like. This is quite the feat for a “green” smoothie. If you opt for coconut water instead of just water, you can some additional sweetness this way as well.
- 2 peeled frozen bananas
- 2 handfuls of spinach
- 1 cucumber
- ½ cup water ( or coconut water)
Peel and freeze 2 bananas ahead of time so you can create the nice icy smoothie texture without having to add ice cubes. Add the ½ cup of water or coconut water ( if you want some additional sweetness), add in the washed spinach, chop up the cucumber ( you can peel first if you like) and add to mix, and add in the frozen bananas. If you have trouble mixing you can add a little more water or coconut water to help with the blending.
